As you may know, a more plant-based diet is good for your health and better for the environment. Livestock production is the largest source of some climate-warming gases, especially from cattle. Just having one meatless meal a week makes a big difference. If everyone in the U.S. stopped eating meat for just one day a week for one year, it would be like taking 7.6 million cars off the road! There are many cookbooks with plant-based recipes that will please meat-eaters and non-meat eaters alike. Molly Katzen has good recipes in her Moosewood cookbooks.
